It's a liability thing. A shop cannot knowingly disable or otherwise do anything to "make inoperative" any TPMS functionality. If the shop thinks these wheels are going on a 2014+ Mirage, they won't touch them without sensors.
Just carry the wheels/tires in to the shop...don't ask them to mount them and then put them on your car. Be ready to tell them what they are going on...just in case they ask. Give them an old car (before model year 2008) that uses a 4x100 bolt pattern and 14" wheels. That should be enough to make most shops happy.
