You could easily try. My wife and I sometimes shift as passenger, when the driver has only one hand left (Coffee, or something). It's easy when you get used to it. As soon as the driver presses the clutch, the passenger shifts.
/Edit: You are a driving instructor, aren't you? Didn't you ever shift for your students?

I know my son-in-law had to take his driving test with a manual in Finland. Otherwise, your license is restricted to automatic only. We don't have that rule here. I have never had a manual transmission driver's education car. I may have done that some with my daughter learning to drive our manuals, but I don't remember.
When I got my class A, B, & C commercial driving license last fall, I had to train & test with a manual (10-speed) transmission. Double clutching a semi-truck was a totally different experience for sure.
I'm sure I would adjust eventually. I am seldom with someone who knows how to drive a manual. Thus, I am in the driver's seat. Manuals are rare here.

I had vehicle with that shift pattern, but I don't remember which ones they were. It sort of resembles the old time shift pattern of the 3-speed shift on the column manuals, except 4th & 5th gear are missing.
I remember driving my grandfather's old cars across fields as a kid, & 1st gear was pretty fast with a 3-speed manual. Then again I was young, & I am sure the fields were quite rough!
That shift pattern works great for plowing snow. Lots of forward/reverse work.
