Serious question: does the airbag light being ON mean the airbags are DISABLED?
Or just that the computer detected that someone was F'ing around with the connections without disconnecting the battery first?

This I don't know for sure. I always assumed if your airbag light is on your bags won't go off but I recall cases where there was an airbag tsb or recall that claimed even though the light is on the bags should still function.
Maybe it depends on what code is stored?
Maybe one of the forum members who installed racing seats and steering wheels crashed by now and could answer?

Well... a quick search leaves me less optimistic. More than a few results say the bags are OFF if the light is on.
